Healthy snacking with beetroot cake

Beetroot cakeSnacking vegetables without having the feeling that you eat them? It is possible! This beetroot cake is healthy and extremely delicious. The first time I made this cake I expected it to be pink, unfortunately this didn’t work out. But, the taste is amazing! So, if you don’t mind eating a brown cake (like somebody cares ;-)) you should definitely try this one. Keep it in the refrigerate and enjoy a pieces of this beetroot cake everyday. The healthy ingredients make this cake perfect for breakfast, dessert or snack!

This is what you need:
– 50 grams of buckwheat flour
– 50 grams of spelt flour
– 100 grams oats
– 200 grams of beetroot
– 2 banana’s
– 3 eggs
– 1,5 teaspoon baking powder
– 3 spoons honey
– 3 dates
– 1 tea spoon cocoa powder
– Greek yogurt
– Cranberries
– a bot of coconut oil

Pre head the oven for 180 degrees.
Start with mixing the oats in a kitchen machine until it is flour and put this away. Mix the banana’s, eggs and beetroot in a kitchen machine until it is puree. Put the puree in a bowl and add the other ingredients except the dates. Mix everything until it because dough. Cut the dates in small pieces and add them to the dough. Grease the cake tin with coconut oil and put the dough in the cake tin. Bake the cake for 50 mins.

Wait until the cake is cold and cut the cake in pieces. Put some Greek yogurt on top of the cake and finish the cake with cranberries. Enjoy!
