Bulgur is not only delicious but also very healthy. It is low in calories and fat and high in protein and fibers. The great benefit of bulgur is that you can eat it both for lunch or diner. I always cook a bit more so I have a nice lunch the next day. This recipe is delicious, simple and fast (just the way we like it). The picture (below) is not great but the taste is amazing!
This is what you need for diner and lunch (2 persons):
– 200 grams of bulgur
– 400 grams of chicken breast
– 150 grams of spinach
– 1 onion
– 1 leek
– 1 teaspoon bouillon
– 100 grams of feta
Cook the bulgur with water and bouillon. Cut the vegetables in small pieces. Bake the onion in a wok. Add the chicken breast and bake this until it is almost finished. Add the other vegetables and wok everything again. When the vegetables are ready add the bulgur. Before your serve the diner you add the feta.
You can eat this recipe cold as lunch, also delicious!
