I love quinoa, it is healthy, you can make it fast and you can eat it every moment of the day. When I make quinoa for diner I always make a bit more to eat for lunch the next day. This time I made quinoa with turkey. Normally I eat chicken but turkey is a healthy options as well. Turkey contains more protein (!) and contains a lower percentage of fat than chicken. This means turkey is the perfect combination with quinoa!
This is what you need for quinoa with turkey (for diner and lunch the next day):
– 100 grams quinoa
– 300 grams of turkey
– 100 grams of kale in small pieces
– 200 grams of black eyed beans
– 50 grams of sunflower seeds
– 1 orange
– 3 spoons of olive oil
– a bit of rosemary
– a bot of thyme
– pepper and salt
Cook the quinoa. In the meantime you cut the turkey in small pieces. Bake the turkey pieces in coconut oil together with the rosemary, thyme a bit of salt and pepper. Now it is time for the dressing. Squeeze the orange and add the olive oil to the orange juice. Mix it and add some salt and pepper. When the turkey pieces are almost ready (turkey needs a bit more time than chicken) you add the kale and the black eyed beans. Bake the for 3-4 minutes together with the turkey. Put the cooked quinoa in a bowl and add the turkey with the kale and black eyed beans. Mix everything and add the dressing and the sunflower seeds. Your diner and lunch are ready, enjoy!
