Diner tip: Courgette with chicken

courgettesSometimes you just want a simple and fast recipe diner. Maybe you are late home from work or you have a lot of other things to do. This recipe is simple, fast, healthy and delicious! If you are a vegetarian you can switch the chicken for cheese of tofu. I’m sure you will love this diner!

This is what you need:
– 400 grams of chicken breast
– 1 spoon of coconut oil
– 120 grams of brown rice
– 1 spoon of bouillon
– 2 courgettes
– 1 spoon of olive oil
– 8 mushrooms
– 1 red onion
– a teaspoon parsley
– a teaspoon basil
– 1 spoon of chili pepper powder
– 1 spoon of turmeric
– 3 spoon tomato sauce
– salt and pepper

Pre head your oven on 180 degrees
Cut the chicken breast in small pieces. Heat the coconut oil and prepare the chicken breast pieces in the coconut oil. Cook the brown rice with the bouillon. Cut the courgettes in two pieces and hollow the 4 parts with a spoon. Put the courgette pulp in a bowl and sprinkle the olive oil on the 4 courgette parts. Put the 4 courgette parts in a baking dish. Heat them for 10 minutes in the oven.
In the meantime you cut the onion and mushrooms in pieces. At the pieces of onion and mushrooms to the courgette pulp in the bowl. At all the spices and the tomato sauce as well. Mix everything and add in the end the chicken breast pieces.
Take the courgettes out of the oven and fill them with the filling. Put the stuffed courgettes in the oven for 10 minutes. After 10 minutes you take them out of the oven and you sprinkle the rice on the courgettes.

Your diner is ready to eat! Enjoy.
