For every moment of the day: Banana bread

banana breadThis is one of my favorite to make and to eat, banana bread. It is simple to make, delicious, healthy and good for every moment of the day. You can eat banana bread for breakfast, lunch or as a snack. And I promise you, you will enjoy it every moment. And don’t worry if you want to take a second piece, this bread is healthy as well!

This is what you need:
– 200 grams buckwheat flour
– 1 spoon spelt flour
– 1 spoon cinnamon
– 3 banana’s, mashed
– 3 eggs
– pinch of salt
– coconut oil
– small pieces dark chocolate (min. 75% cocoa)
– cake mold 20×10 cm

Prehead the oven for 200 degrees
Mix everything, except the coconut oil, with a whisk in a bowl. Grease the cake mold with the coconut oil. Put the mix in the cake mold and bake the cake for 45 mins. You can save the cake for almost a week in a fridge! Enjoy.
